The fruits are round, 4–7 cm in diameter, with a thick, leathery rind that may be yellow, reddish, or brown when ripe. Inside, the pulp is white, juicy, and aromatic, clinging to large seeds. The taste varies from sweet to sour, depending on the variety – the sweet santol is more commonly cultivated for eating, while the sour santol is often used in curries, preserves, and jams.
